Incredible Brownies

8 oz. caramels
1 c (2 sticks) + 2 T unsalted butter
1/4 c SMITH'S whipping cream
1 t vanilla
12 oz. top quality semisweet chocolate
1-1/3 c sugar
6 eggs
1 c cake flour
Powdered sugar

Line a 9" x 13" baking pan with parchment or waxed paper. Butter and flour entire pan, including paper. In a heavy saucepan over low heat, stir together the caramels, 2 tablespoons of the butter, cream and vanilla until mixture is melted and smooth. Set aside. Melt chocolate in a heavy saucepan over low heat or in a microwave-safe bowl in a microwave oven. Stir until smooth. Pour chocolate into a mixer bowl. Beat the remaining 1 cup butter into the warm chocolate. Beat in sugar, add eggs, one at a time, beating until mixture becomes light and fluffy. Blend in flour just until it disappears. Pour batter into prepared pan. Slowly pour caramel mixture over batter so that it spreads evenly. Bake in a preheated 350° oven for 30 minutes, or until toothpick inserted 1" from edge has a dry crumb. Cool in pan. Dust with powdered sugar.

Elegant Cheese Squares

1 c graham cracker crumbs
3 T sugar
1/4 c softened butter
1-8 oz. pkg. Philadelphia cream cheese
1/2 c sugar
1/2 c SMITH'S milk
1/8 t salt
1 t lemon juice
1 t vanilla
1-1/2 c thawed Cool Whip

Combine crumbs and 3 teaspoons sugar. Add butter; mix well. Press firmly with back of spoon over bottom and sides of 8" square pan. Bake at 375° for 8 minutes, cool. Beat cheese until smooth and fluffy. Add 1/2 cup sugar gradually, beating constantly. Add salt. Blend in milk, lemon juice and vanilla. Then blend in Cool Whip. Spoon into crumb-lined pan. Chill until set, at least 3 hours. Cut into squares. Makes about 8 servings.

No-Bake Cookies

1/4 lb. butter
2 c sugar
3 T cocoa
1/2 c SMITH'S milk
1/2 c peanut butter
3 c uncooked oatmeal
1 t vanilla

Put first 4 ingredients in heavy saucepan and boil 1-1/2 minutes. Remove from heat and add remaining ingredients. Mix and spoon onto waxed paper. Dry thoroughly overnight.

Sour Cream Apple Squares

2 c flour
2 c brown sugar
1/2 c butter or margarine, softened
1 c nuts (opt.)

Combine and blend first 3 ingredients at low speed until crumbly. Add nuts, if desired. Press 2-3/4 cups of above mixture in ungreased 9" x 13" pan. To remaining mixture add:

2 t cinnamon
1 t vanilla
1 t baking soda
1/2 t salt
1 c SMITH'S sour cream
1 egg

Blend well. Add 2 cups apples (peeled and finely chopped). Spoon evenly over base and bake at 350° for 25 to 35 minutes until toothpick comes out clean. Top with Cool Whip before serving.
