Recipes: Pies & Cakes
Pecan Chess Pie
1-1/2 c brown sugar
3/4 c sugar
2 T flour
3/4 c butter, melted
5 eggs
6 T SMITH'S buttermilk
1-1/2 t vanilla
1-1/2 c chopped pecans
Mix sugar and flour. Add melted butter and mix with whisk or fork. Add eggs, 1 at a time, beating well. Add milk and vanilla and mix well. Sprinkle pecans evenly over the top. Pour into 10" unbaked pie shell. Bake 45 minutes in 350° oven. Cool at least 2 hours, top with whipped cream.
Apple Cream Pie
1/3 t salt
1 t vanilla
2 c finely chopped apples
2 T flour
1 c SMITH'S sour cream
1 egg, slightly beaten
9" unbaked pie shell
Mix together above ingredients and pour into unbaked pie shell and top with the following;
TOPPING:
1/3 c flour
1 t cinnamon
1/3 c white sugar
1/4 c butter
Blend into crumbs and sprinkle over top of pie. Bake at 425° for 25 to 30 minutes or until filling is firm.
Buttermilk Coffee Cake
1 c margarine
1 t salt
1 c sugar
2 eggs
1 t vanilla
2 c flour
1 c SMITH'S buttermilk
1 t soda
1 t baking powder
Cream sugar and butter as usual. Add eggs. Mix dry ingredients together. Gradually add buttermilk and dry ingredients to creamed sugar mixture alternating back and forth between the two. Put 1/2 of this batter into a 9" x 12" pan. Then layer with topping layer, then batter layer, then topping layer. Bake at 350° for 30 minutes.
TOPPING:
1/4 c white sugar
1 c nuts
1/3 c brown sugar
1 t cinnamon
Mix together.
Texas Sheet Cake
2 c flour
2 c sugar
1/2 t salt
Sift together in large mixing bowl.
2 sticks margarine
1 c water
4 T cocoa
Bring to boil in small saucepan.
2 eggs
1/2 c SMITH'S sour cream
1 T vinegar
1 t soda
1 t vanilla
Mix together in a small bowl. Add boiled mixture to egg mixture. Add to dry ingredients and mix well. Grease 11" x 17" jellyroll pan. Bake at 350° for 20 minutes. Spread icing on cake while hot.
Icing:
1 stick margarine
4 T cocoa
6 T SMITH'S milk
Bring to a boil, remove from heat and add:
1 box powdered sugar
1 t vanilla
1/2 c chopped nuts
NOTE: Use 1/2 cup SMITH'S buttermilk and add the soda to the dry mixture.
